2 cups diced potatoes
2 cups shredded cheese, your favorite
2 cups sour cream
2 cans cream of chicken or cream of mushroom (any flavor)
1 onion, chopped
1 small can chopped pimento, drained (optional)
Pepper, favorite herb and garlic powder, to taste
Topping
1 cup cornflakes
1/2 lb butter, melted
Preheat oven to 350. Lightly grease baking pan. Mix ingredients and pour into dish. Sprinkle with cornflakes and drizzle with butter on top. Bake, uncovered, for 60-80 minutes.
NOTES: This is one of those easy, versatile casseroles that will change flavors with the types of cheese and soups you use.
