1 (2 lb) bag frozen hash brown potatoes, thawed
2 1/2 cups grated Monterey jack and Swiss cheeses
2 cups sour cream
1 can cream of mushroom soup
1/2 large onion, chopped
4 cups chopped ham, optional
2 cups crushed cornflakes
1/4 cup melted butter
Spray 2 casserole dishes with cooking spray. In a bowl, combine first 3 ingredients and spread potato mixture in dishes and sprinkle with corn flakes on top. Drizzle with melted butter and bake at 350 for 45 minutes. Serves 12-16
