1 cup ketchup
2 tbsp cider vinegar and brown sugar
1/2 tsp dry mustard
2 drops hot pepper sauce
1 tbsp minced onion
1 tsp hickory barbecue smoke seasoning
1/4 cup water
8 (4 oz) butterfly pork chops
Seasoned salt
8 sandwich buns

Combine first 8 ingredients in a saucepan. Simmer uncovered 10-15 minutes, stirring often. Cool. Place chops in a non-metal pan; liberally coat both sides with sauce. Cover and let marinate overnight in refrigerator. Sprinkle chops with seasoned salt.

Grill. Place cooked chops on but and serve. Garnish with pickles and mustard, if desired.
