1 lb ground beef
1 tbsp chili powder
1/4 tsp ground cumin, salt and pepper
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1 cup chunky salsa
3/4 cup shredded cheddar cheese
8 (9 inch) tortillas, warmed

Saute beef; drain. Return to skillet and add seasonings. Stir in spinach and salsa; heat through. Remove from heat and stir in cheese. To serve, spoon 1/2 cup mixture in center of each tortilla. Fold bottom edge up over filling, fold sides to center, overlapping edges. Serves 8
