1 1/2 lb sea scallops
Salt and pepper, to taste
2 tbsp olive oil
1 tsp dried thyme
2 tsp dried rosemary and finely chopped garlic
1/8 tsp red pepper flakes
2 tbsp lemon juice
1/2 cup orange juice
4 tbsp butter, room temperature
3/4 cup diced and seeded ripe tomatoes

Place scallops in a bowl with next 8 ingredients; mix well. Refrigerate 1 hour. Meanwhile, place orange juice in pan and cook over high heat until reduced by half. Add butter and tomatoes, cook briefly until well blended. Season with salt and pepper. Keep it warm.

Heat broiler or grill until hot. Divide scallops into 4 batches. Place on skewers and brush with marinade. Place on broiler/grill and cook 4 minutes. Turn skewers and cook 4 more minutes. Serve immediately with orange butter sauce. Serves 4
