1 lb sea scallops
2 oz butter
1 oz Marsala wine
Salt, pepper and flour

Wash and pat dry scallops, then dust in flour. Coat bottom of saute pan with butter and place scallops in pan and season with salt and pepper. Saute on both sides until lightly browned for 2 – 2 1/2 minutes at high heat. Add 1 oz wine to deglaze pan and reduce sauce by half. Place scallops in casserole dish and pour sauce over top. Sprinkle with paprika. Bake at 400 for 5 minutes. Serve.
