1 (10 oz) pkg long grain and wild rice, cooked according to package directions for less moist rice.
6 green onions, sliced
1/2 cup each chopped celery and green or red bell pepper
1/4 cup sliced green olives
1/2 cup slivered almonds
2 (6 oz) jars marinated artichokes, drained with liquid reserved
1/4 tsp curry powder
1/3 cup mayonnaise
2-3 cups cooked chicken cubed
Combine cooked rice with the next 5 ingredients. Mix artichoke juice with curry powder and mayonnaise; stir into rice mixture. Add artichokes and chicken. Toss lightly. Serve warm or cold.
