10 1/2 oz can beef broth
1/2 cup water
2 tbsp cornstarch
1 tbsp soy sauce
1/4 tsp crushed red pepper
2 tbsp peanut oil, divided
4 cups broccoli flowerettes
1/2 - 1 lb sliced mushrooms
2 green onions, diagonally sliced
1 small yellow onion, sliced
1 lb boneless beef sirloin steak, thinly sliced
Hot cooked noodles or rice
In a bowl, combine first 4 ingredients. In a skillet, heat 1 tbsp oil and stir-fry vegetables for 2 minutes or until tender-crisp. Transfer to a bowl.
In same skillet over high heat, in remaining oil, stir-fry beef, half at a time, until color just changes. Transfer to bowl with vegetables.
Stir broth mixture into skillet and cook over high heat until mixture boils and thickens, stirring often. Add broccoli-beef mixture; heat through. Serve over noodles or rice. Serves 4
