4 medium ripe plum tomatoes, seeded and chopped
2tbsp finely chopped green or red bell pepper
1tbsp finely chopped red onion
2 garlic cloves, pressed
8 large fresh basil leaves
2 tbsp olive oil
Salt and pepper, to taste
1 small sourdough bread loaf or French baguette
2oz shredded Parmesan cheese
In medium bowl, combine tomato, bell pepper, onion, and garlic. Stack basil leaves. Cut into long, thin strips. Add to tomato mixture with oil and season with salt and pepper. Cover. Let stand 1-2 hours for flavors to blend.
Diagonally cut bread into long, thin slices. Broil or grill on both sides till golden brown. Spoon tomato mixture onto bread slices. Sprinkle w/ Parmesan and additional pepper. Serve immediately. Serves 8-10
