1 1/2 lbs pork tenderloin, cut into 1 inch chunks
1 medium onion, chopped
1 small green bell pepper, diced
3 garlic cloves, minced
1 can (28 oz) diced tomatoes, undrained
1 can (15 oz) black beans, rinsed and drained
1 cup low-fat low-sodium beef broth
1 tbsp chili powder
1 tsp ground cumin
1/4 tsp ground red pepper
Salt and pepper to taste (optional)

In a soup pot, saute the pork over high heat for 8 to 10 minutes. Add the onion, bell pepper, and garlic, and saute for 5 minutes. Add the remaining ingredients; mix well and bring to a boil. Reduce the heat to medium-low and simmer for 30 to 35 minutes. Serves 6
