2 lb jumbo scallops
Flour
1/2 cup butter
4 clove garlic, minced
2 cup diced fresh tomatoes
1/2 cup minced parsley
2 tbsp lemon juice
Salt and pepper, to taste

Cut scallops in half. Dry on paper towels, season flour with some salt and pepper and dust scallops. Heat butter in a skillet and add garlic and mix. Add scallops and saute until lightly browned. Stir in remaining ingredients. Taste for seasoning and adjust with salt and pepper. Remove from pan as soon as they are cooked. Serves 4
