2 lb fresh green beans, washed and trimmed
1 small onion, minced
1 small clove garlic, minced
1/2 cup grated parmesan cheese
6 tbsp oil
2 tbsp white wine vinegar
1 tsp salt
1/4 tsp pepper

Garnish
Lettuce, tomato wedges and ripe olives

Cook beans in boiling salted water just until tender. Drain and cool. Combine with onion and garlic. Sprinkle with cheese. Set aside.

Combine next 4 ingredients, whisking until well mixed. Pour over green bean mixture. Toss. Cover and refrigerate at least 8 hours. Serve at room temperature on lettuce bed and tomato wedges and olives.
