2 lbs fresh whole green beans, trimmed
1 small onion, minced
1 clove garlic, minced
1/2 cup grated parmesan cheese

Dressing
6 tbsp oil
2 tsp white wine vinegar
1 tsp salt
1/2 tsp pepper

Garnish
Lettuce
Tomato wedges
Ripe olives

Cook whole bean in salted boiling water just until tender. Drain and cool. Combine with onion and garlic. Sprinkle with cheese. Set aside.

Combine dressing ingredients and pour over bean mixture. Toss. Cover and refrigerate at least 8 hours. Serve at room temperature on lettuce bed with tomato wedges and olives. Serves 8
