5 tbsp butter
5 1/2 tbsp white wine
2 1/2 tbsp chopped parsley and dry sherry
2 scallions, chopped
1 lb scallops
1/2 lb mushrooms, sliced
Cooked rice

Combine first 4 ingredients in the pot. Bring to a boil, stirring constantly. Add scallops and mushrooms. Cover and cook 15 minutes or until scallops are tender. Serve over hot rice. Serves 4
