2 tbsp olive oil
4 cloves garlic
8 green onions, chopped
1 1/3 lb bay scallops
1/2 lb sliced fresh mushrooms
1 tsp dried tarragon
1/2 cup dry white wine

Heat oil in skillet. Add garlic and onions. Saute for 20 seconds. Add scallops and mushrooms. Saute, stirring, about 2 minutes. Add tarragon and wine. Turn up heat and cook for 2 minutes more or until liquid is reduced by half. Serve with cooked rice. Serves 4
