WATERCRESS, MELON AND ALMOND SALAD

3 tbsp lime juice
1 tsp sugar and minced ginger root
1/4 cup oil
2 bunches watercress, trimmed and chopped
2 1/2 cups cubed watermelon and cantaloupe
1/3 cup toasted and sliced almonds

In a large bowl, whisk together first 3 ingredients. Gradually add oil and seasoned salt and pepper, to taste. Add next 3 ingredients and toss to coat. Transfer salad to plate, sprinkle with sliced almonds and serve immediately. Serves 4
