SPINACH MUSHROOM SAUTE

1 tbsp butter and olive oil
1 (8 oz) pkg fresh mushrooms, sliced
1/2 small onion, finely chopped
1 garlic clove, minced
1/4 tsp salt
1 (10 oz) bag fresh spinach, thoroughly washed
2 tbsp fresh lemon juice

Melt butter with oil in a large skillet over medium-high heat; add sliced mushrooms and next 3 ingredients. Saute 3 to 5 minutes or until tender; gradually add spinach, stirring to coat with mushroom mixture. Remove from heat, and toss spinach mixture with lemon juice. Serves 2
