Olive oil
1/3 cup chopped green pepper and celery
1/4 cup sliced green onion
6 oz mushrooms, chopped
2 tbsp Dijon mustard
1 1/2 cups diced ham
1 tbsp flour
1/2 cup grated cheddar cheese
Pepper
Melted butter
8 sheets phyllo dough
Bread crumbs
Garnish: Cranberry sauce

Saute vegetables until tender; add mustard and stir in next 4 ingredients. Brush melted butter over each layer of phyllo and sprinkle with bread crumbs between layers.

Mound ham mixture onto phyllo and fold over about 1 1/2 inch on each side and roll up, starting at one long side. Brush top with butter.

Make several diagonal cuts. Cover and chill up to 24 hours. Bake at 400 for 25-30 minutes or until brown. Serve with cranberry sauce.
