4 sheets phyllo dough
Butter, melted
Filling:
1 pkg goat cheese
1 (8 oz) pg cream cheese
1/2 cup grated Romano cheese
2 tsp Greek or Italian seasoning
2 cloves garlic, minced
3 tbsp olive oil
1 egg
1/2 cup Italian bread crumbs
Mix all filling ingredients, this should forma thick paste. Make 4 layers of phyllo dough, buttering each layer. Spread some of the filling onto the buttered phyllo about 1/2 of the dough lengthwise.
Starting at the filling part, roll the dough. Place on an ungreased baking sheet. Make a slit almost all the way through. Spread top layer with butter. Bake at 375 for 10-15 minutes or until golden brown.
Note: Chopped spinach is also good in the filling or add the stuffing in a boneless, skinless chicken breast that has been pounded thin. Roll the chicken breast in the phyllo dough and bake. Good served with mushroom sauce on top.
