1 pound grated sharp cheddar cheese
1 pound grated monterey jack
3 oz cream cheese, room temperature
4 oz pimento
1/2 cup chopped green olives stuffed with pimento
3 tbsp finely chopped onion
1 tbsp garlic salt
Dash cayenne pepper
1 1/2 cups mayonnaise*
Fresh ground pepper to taste
Combine all ingredients in a large mixing bowl. Mix well. Refrigerate until ready to serve.
*Tip: Some like more mayonnaise than others. Start with a cup and add until desired consistency. Also, some people like their pimento cheese more creamy and use a mixer to blend the cheeses.
NOTE: I like mine with some texture so I just mix it in the bowl.
