1 loaf Canape French Bread
1/2 cup chopped carrot
1/2 cup diced red bell pepper
1 lemon
1 pkg (9-11 oz) frozen creamed spinach, thawed
1 garlic clove, pressed
3/4 cup (3 oz) grated fresh Parmesan cheese, divided
Preheat oven to 375. Slice canape bread into 20 slices, about 1/4 inch thick. Arrange bread slices in a single layer on rectangle stone.
Chop carrot and dice bell pepper. Zest lemon to measure 2 tsp zest. Juice lemon to measure 1 tsp juice. In a bowl, combine carrot, bell pepper, lemon zest, juice, spinach and garlic. Grate Parmesan cheese; add 1/2 cup of the cheese to spinach mixture and mix well.
Scoop spinach mixture evenly over bread slices; gently flatten filling.
Sprinkle with remaining cheese. Bake 18-20 minutes or until edges of bread are golden brown and cheese is melted. Remove from oven & serve. Yield: 20 appetizers
