1 1/2 lbs boneless pork, cut into 1/2 inch cubes
1 tbsp cooking oil
1 (15 oz) can black beans, rinsed and drained
1 can cream of chicken soup
1 (14 1/2 oz) can diced tomatoes, undrained
2 (4 oz) can chopped green chilies
1 cup quick cooking rice
1/4 cup water
2-3 tbsp salsa
1 tsp ground cumin
1/2 cup shredded sharp cheddar cheese

Preheat oven to 350. In a large skillet, saute pork in oil until no longer pink. Add the remaining ingredients, except the cheese, cook and stir until bubbly. Pour into an ungreased 2 quart baking dish. Bake, uncovered, for 30 minutes until bubbly. Sprinkle with cheese and return to oven and continue to bake until cheese melts.
