ITALIAN STYLE CRUSTED PORK TENDERLOIN

1 1/2 lb pork tenderloin
2 cups garlic herb or Italian-style bread crumbs
1/2 cup olive oil
8-10 fresh basil leaves

Preheat oven to 425.

Separate the two halves in the pork tenderloin pkg.

Mix bread crumbs and oil to consistency that will stick to meat when pressed such as the consistency of graham cracker crust mixture. Coat meat with the bread crumb mixture on all sides by pressing with hands.

Add basil leaves to pan. Make sure that there are no pink areas showing through the coating, approximately 1/4 inch thick on all sides.

Place uncovered on baking sheet and bake at 425 for 40-45 minutes. Let meat rest for 10 minutes before slicing. Serves 4
