1 1/2 cups flour
1 cup sifted cornstarch
1 tbsp baking powder
1 cup butter
2 cups sugar
1 cup milk
7 egg whites

Chewy Fudge Frosting
1/4 cup butter
1 cup brown sugar, packed
1/2 cup milk
2 oz unsweetened chocolate, cut up
2 tbsp light cream, or use milk
2 tsp vanilla

Cake: Grease and lightly flour 2 (9 inch) round cake pans or one 13x9 inch baking pan; set aside.

Stir together flour, cornstarch, and baking powder. Set aside. In large mixer bowl beat butter on medium speed of electric mixer for about 30 seconds. Add the sugar; beat till well combined. Alternately add dry ingredients and the 1 cup milk, beating on low speed after each addition till just combined.

Transfer batter to a large mixing bowl. Wash beaters. In another bowl beat egg whites till stiff peaks form (tips stand straight). Fold into batter till combined. Turn batter into prepared pans. Bake at 350 for 25 to 30 minutes for the 9 inchpans or 40 to 45 minutes for the 13x9 inch pan. Cool on wire rack for 10 minutes. Remove from pan. Cool thoroughly. Pour frosting over cake.

Chewy Fudge Frosting: In heavy 1 1/2 quart saucepan melt the butter. Add sugar; stir thoroughly. Add the 1/2 cup milk and chocolate; stir constantly till mixture boils. Cook over medium heat, stirring occasionally, to 245 degrees (firm ball stage), 20 to 30 minutes (mixture should boil gently over surface). Remove from heat; stir in cream and vanilla. Quickly pour and spread on cake.
