1/4 cup olive oil
1 tbsp butter
4 pork chops, 3/4 inch thick
1/2 cup flour seasoned with salt and pepper on a plate
1 tsp chopped garlic
1 tsp tomato paste, dissolved in 1/2 cup dry marsala
1/2 cup red wine
Salt and pepper
1/4 tsp fennel seed
1 tbsp chopped parsley
1/3 cup beef broth

Heat oil and butter in a large skillet. Dredge pork chops in seasoned flour. When butter foams slip in chops and brown on each side. Remove from pan.

Add garlic stirring until it becomes golden brown, add mixture of 2 wines with paste. Season with salt and pepper and add fennel seeds.

Return pork chops in skillet and cover pan lightly and cook for 1/2 hour over medium chops. Turn chops and cook for 1/2 hour more or until meat is tender.

When nearly done add parsley mixing into cooking juices and turning chops. Transfer chops to a warm platter, removing all but 2-3 tbsp fat, add beef broth stir well, boil for 3 minutes or until well mixed, scraping pan, pour over chops. Serves 4
