1 (5-6 lb) pork loin roast
1 tsp coarse salt

Marinade
3 large cloves garlic
1/2 tsp dried rosemary leaves
Dash powdered allspice
2 tsp salt
1/2 tsp thyme
3 tbsp cooking oil

Rub inside of pork loin with salt. Tie into roll.

Mix marinade ingredients and rub into roast. Let marinate for 6 hour or overnight. Bake, covered, at 350 for 2 to 2 1/2 hours.

NOTE: This is also excellent grilled.
