3-4 lbs beef tip roast
Marinade
1 cup beer or apple cider
1/3 cup vegetable oil
1 tsp salt
1/4 tsp each garlic powder and pepper
Sauce
1/2 cup beer or apple cider
1/4 cup meat drippings
1 1/2 tsp salt
Dash pepper
Pierce meat about 20 times to allow marinade to soak into roast. Place in a resealable bake and mix together marinade ingredients and pour over roast. Refrigerate overnight; turning bag occasionally.
About 2 hours before serving, place in a shallow roasting pan and roast at 325 for 2 hours. Place meat on a warm platter allowing to rest before slicing.
Sauce: After removing drippings from pan, leaving brown particles, return 1/4 cup reserved drippings and remaining ingredients to pan and heat mixture to a boil. Serve over sliced meat.
