3 tbsp vegetable oil
3 tbsp sherry or white wine
1/3 cup soy sauce
3 tbsp brown sugar
3 clove garlic, chopped
1 tbsp grated ginger
2 (3/4 – 1 lb) pork tenderloins

Thoroughly combine first 6 ingredients in a small bowl. Put tenderloins in a resealable bag and pour mixture over it and marinate in the refrigerate for at least 2 hours and up to 36.

Preheat oven to 450. Remove pork from marinade and arrange on a roasting rack. Put the marinade in a small pot and bring to a boil, then simmer, uncovered on low while the pork is roasting.

Place the pork in the middle rack of the hot oven. Baste with simmering marinade every 10 minutes. Roast for 30 minutes or until internal temperature registers 155.
