1 tbsp coarse salt, pepper and dried oregano
6 garlic cloves, peeled
3 tbsp oil
4 slices gruyere or Swiss cheese
4-5 lb boneless pork shoulder
1 dried bay leaf
3 cups chicken or beef broth
Mayonnaise
4 sandwich buns
In a food processor combine seasonings and garlic. Pulse until a paste is formed. Rut mixture over the meat and let it stand at room temperature for 1 hour.
Heat the oil in a large ovenproof pan over medium-high heat. Add the pork and brown on all sides. Add the bay leaf and broth; bring to a boil, and cover. Reduce heat to low and simmer 3-4 hours.
Remove the pork and let cool and shred. Spread the mayonnaise on the buns and top with cheese. Pile with the pork and serve. Makes 4 sandwiches.
