1 1/2 lb bay scallops
8 oz snow peas
1 carrot, julienned
2 tbsp sesame oil and sesame seeds
1 tsp dried ground coriander
Garnishes: watercress and lemon slices

Quickly saute scallops, snow peas and carrot in hot oil for about 3-4 minutes. Remove from heat; toss with coriander and sesame seeds. Cover; refrigerate until chilled. When serving, divide watercress onto each plate; arrange scallop mixture on top and add lemon slices to side of each plate.
