2 lb new potatoes
1 tbsp butter and olive oil
2 tbsp chopped fresh rosemary
1/2 tsp salt
1/4 tsp pepper and paprika
1 clove garlic, crushed
1 cup diced cheddar cheese

Preheat oven to 350. Wash potatoes; pat dry. Cut in halves or quartered. Set aside. Melt butter and boil in a square baking dish in oven. Remove from oven and add potatoes, 1 tbsp rosemary, salt, pepper, paprika and garlic. Stir and toss until coated evenly.

Bake, stirring every 15 minutes or until well-browned and tender, 30-40 minutes. Remove from oven, add remaining rosemary; stir to combine. Scatter cheese over top and return to oven until cheese melts softly among potatoes. Serves hot or warm. Serves 4

Note: Just as good with cheese left out.
