Nonstick cooking spray
2 (6 oz) pkg oven roasted chicken breast pieces
1 (6 oz) box cornbread stuffing mix
1 cup frozen whole kernel corn, thawed
1 can cream of mushroom soup
1 cup finely shredded Monterey Jack cheese
1 (4 oz) jar pimientos, drained
1 (4 oz) can diced mild green chilies, drained
1 cup sour cream
1 tsp ground cumin
1 tsp ground coriander
Preheat oven to 375 degrees. Lightly spray 11 x 7-inch or shallow 2-1/2-quart glass or ceramic baking dish with nonstick cooking spray. In large bowl, stir ingredients until well blended. Spread chicken mixture into prepared baking dish. Cover dish with foil and bake 30 minutes. Remove foil and bake 10 to 15 minutes longer or until top is golden and internal temperature reaches 145 degrees. Serves: 6
