2 tbsp butter
1 (6.8 oz) pkg Rice a Roni Spanish Rice
1 small onion, chopped
1 (14 oz) can diced tomatoes
1 (4.5 oz) can chopped green chilies
2 cups water
1 (10.75 oz) can cream of chicken soup
1 pint sour cream
2 tsp cumin
1/2 tsp salt
1/2 tsp ground black pepper
3 cups chopped cooked turkey
2 cups grated Colby-Jack cheese blend
1 cup crushed tortilla chips

Preheat oven to 350. In a large saucepan, melt butter. Add rice and onion; cook for 4 to 6 minutes or until rice is browned, stirring constantly. Add seasoning packet, tomatoes, chilies, and water. Bring to a boil. Cover, reduce heat, and cook for 20 minutes, or until liquid is absorbed and rice is tender.

Add soup and next 5 ingredients; stir.Spoon mixture into a lightly greased 13x9 inch baking dish. Top with grated cheese and crushed tortilla chips. Bake for 30 to 40 minutes, or until bubbly. Serves 12
