1/2 cup pitted, roughly chopped oil-cured black olives, pimento-stuffed green olives, sun-dried tomatoes and canned pimentos
3 tbsp finely chopped parsley
2 anchovy fillets, mashed
2 tsp minced garlic
1/2 tsp dried oregano and black pepper
1 tsp fresh lemon juice
4 oz cream cheese, softened

Stir together all of the ingredients except the cream cheese until well combined. Stir in the cream cheese and mix until thoroughly blended. Makes 1-1/2 cups.

NOTE: This can be spread on small crusty rolls then stuffed with shaved ham, thin slices of provolone cheese, tomato slices and some peppery arugula. Wrap well and carry to the party. It is also good spread on party toast or crackers.
