Cupcake:
1 lemon cake mix
3 eggs
1/2 cup melted butter
1 cup lemon juice
Lemon zest

Icing:
2 1/2 cup shortening
3/4 cup water
1 tsp vanilla
2 lb confectioners sugar

Lemon Curd:
6 tbsp unsalted butter, softened at room temperature
1 cup sugar
2 large eggs
2 large egg yolks
2/3 cup fresh lemon juice
1 tsp grated lemon zest

In a large bowl, beat the butter and sugar with an electric mixer, about 2 minutes. Slowly add the eggs and yolks. Beat for 1 minute. Mix in the lemon juice. The mixture will look curdled, but it will smooth out as it cooks.

Mix all of the cake ingredients together. Using an ice cream scoop put 1 1/2 scoops in jumbo paper liners. Bake for 30 minutes or until cupcakes are done. Cool completely.

Icing: Combine the shortening, water an vanilla together. Using paddle attachment whip slowly until combined. Add confectioners sugar in thirds. Still on a very low speed. Once combined, increase speed to high and whip for a couple of minutes. Tint with a bit of yellow.
