2 (5 oz) chicken breasts, julienne
1 yellow bell pepper, julienne
1 Portobello mushroom
1 Roma tomato, julienne
1 Chinese eggplant, circle cut
1 wood ear mushroom, julienne
3 green onions, cut on a bias
1 tbsp minced garlic
1/2 cup chicken broth
1/4 cup olive oil
1 cup buffalo mozzarella, dice cut
2 tbsp chopped parsley
14 oz pasta of choice
Parmesan cheese

On medium heat, in a large saute pan, cook chicken, olive oil and garlic for approximately 2 minutes. Gradually add vegetables, starting with pepper, eggplant and mushroom, green onions and tomatoes. Saute for 1 minute. Deglaze pan with stock. After vegetables and chicken are done, add mozzarella and then parsley. Layer mixture over pasta. Garnish with parmesan cheese.
