1 (8 oz) pkg cream cheese, softened
1 1/2 tsp vanilla
1/2 cup boiling water
1 (4-serving size) strawberry flavor gelatin
Sugar (optional add in for sweeter taste)
1/2 cup very cold water
2 cups frozen whipped topping, thawed and divided
2 cups chopped fresh strawberries
Prepare 8 glass dessert dishes (or use as many dessert dishes as you like).
In a bowl, beat cream cheese and vanilla until smooth; set aside
In a small bowl, stir 1/2 cup boiling water with gelatin until no granules remain; add in cold water and stir until slightly thickened.
Gradually add to the cream cheese beating after each addition until well blended, if you want a sweeter flavor add in sugar to taste. Stir in 1 1/2 cups whipped topping and chopped strawberries.
Spoon the mixture between the dessert dishes. Refrigerate at least 2 hours before serving. Serve with a dollop the remaining Whipped topping onto the top of each dessert.
