2 tbsp olive oil
2 red onions, sliced thinly
4 tbsp fresh thyme
2 tbsp balsamic vinegar
1 lb puff pastry
1 cup goat cheese, cubed
2 eggs, beaten
Salt and pepper to taste
Fresh thyme sprigs for garnish
Mixed green salad
Cherry tomatoes

Heat olive oil in a large, flat pan. Throw in the red, sliced onions and cook for about ten minutes, or until softened, stirring often with a wooden spoon to prevent browning. Add thyme, balsamic vinegar, seasoning, and cook the onions for another five minutes. Remove the pan from the heat and let cool.

Preheat oven to 425. Using puff pastry, place rounds on baking sheets. Place onion filling evenly onto all pastry rounds and top with the goat cheese. Brush the edge of each pastry round with beaten egg and then bake for 30 minutes. Add salad leaves and tomatoes to each pastry round and garnish with fresh thyme. Serves 8.
