3 tbsp butter
3 Tbslp flour
1 cup hot low-fat milk
3/4 cup grated Gruyere cheese
1 dash cayenne pepper
2 cups minced cooked Black Forest ham
1 whole egg
1 egg white
1 pinch of cream of tartar
1/2 cup Parmesan cheese, grated
Preheat oven to 350. With vegetable oil spray, grease a 2-quart souffle or casserole dish on bottom and sides. Sprinkle the grated Parmesan cheese on bottom and sides liberally.
In a sauce pan, melt the butter and blend in flour with a whisk. Add hot milk, stir vigorously until blended. Stir in ham and cheese. Let cool a little.
While mixture in cooling in the sauce pan, beat the egg yolk slightly, adding a little of the hot mixture to the yolk. Add back into the hot cheese mixture, stirring well.
Beat egg whites and cream of tartar till the whites are quite stiff. Fold them thoroughly into the ham and cheese mixture. Pour mixture into the prepared souffle dish and bake until firm, for 35-40 minutes. Serve immediately.
