*MEXICAN QUESO SOUP* - Crock Pot

1/2 lbs beef stew meat
2 cans Mexican flavored tomatoes with chilies
1 can beef broth
1 can corn - drained
velveeta or similar processed cheese product
salt and pepper to taste

Place all ingredients, except cheese into crock pot. Cook until meat is tender. Slice a thick piece of cheese and place at the bottom of everyone's bowl. Spoon soup over to fill bowl. Stir before serving. Serving

Suggestions: 1. Crumble some tortilla chips on top. 2. Dip soft tortillas into soup. 3. Garnish with chopped green onions.

NOTE: You can use chicken instead of beef. If you do so, be sure to swap the beef broth out for chicken broth. As well as the beef stew meat for chicken.
