12 small red skin potatoes, quartered
2 cloves garlic, peeled
1/3 cup Dijon or County Dijon mustard
1/3 cup butter, melted
2 tbsp chopped parsley
In a large pot, place potatoes and garlic in a single layer. Cook, covered, over low heat for 45-60 minutes or until done, stirring occasionally. Mix together remaining ingredients and toss with hot potatoes. Serve immediately.
