2 tbsp bacon fat, butter or olive oil
1 lb bacon, cut into small pieces
6 medium potatoes, sliced 1/4 inch thick with skins on
2 medium onions, sliced
1/2 tsp pepper
1/4 cup snipped parsley
1/2 tsp garlic salt
1/4 tsp salt
3/4 cup water
In a large skillet, melt fat and coat bottom and sides of skillet; add bacon first, then layer with half the potatoes, onion and sprinkle with half the salt, pepper and parsley. Repeat with remaining potatoes and spices. Add 3/4 cup water. Bring almost to a boil.
Cover and reduce heat to low. Simmer for about 30 minutes or until potatoes are tender and water is mostly absorbed. If water is absorbed before potatoes are tender, add a little more water. To get the potatoes to brown more, use less or not water and stir more often. Serves 6
