1 garlic clove, minced
1/2 tsp salt
1/8 tsp pepper
2 tsp chopped fresh oregano or 1/2 tsp dried
2 tbsp red wine vinegar
3 tbsp extra-virgin olive oil
1 medium head romaine lettuce
4 oz hot salami, thin sliced
4 oz provolone cheese, cut into 1/2-inch dice

In a large bowl, combine garlic, salt, pepper, oregano, vinegar, and olive oil. Beat with a fork to blend. Set aside.

Discard large outer leaves from romaine lettuce. Cut remaining lettuce into 2-inch pieces, making about 4 cups of greens. Quarter salami slices. Toss lettuce, salami, provolone, and dressing together until evenly coated.
