2 tbsp olive oil
2 tbsp chopped thyme
1 tbsp chopped lemon peel
4 lb boneless rump roast

Heat oven to 350. In bowl, combine olive oil, thyme, and lemon peel. Rub on roast, place on rack set in roasting pan. Roast 1 hour 45 min. or until done. Baste occasionally with pan juices. Serves 12
