3 tbsp flour
1/2 tsp salt
1/4 tsp pepper
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 medium onion, coarsely chopped
1 tbsp butter
1 cup chicken broth
3 tbsp lemon juice
1/2 tsp thyme
Lemon wedges and chopped parsley, garnish
Combine flour, salt and pepper. Coat chicken with mixture and shake off excess. Reserve the excess seasoned flour
In a large skillet, heat 1 tbsp oil and brown chicken on one side. Add remaining tbsp oil, turn the chicken and brown on the second side. Transfer the chicken to a plate and keep warm.
Add butter to skillet and saute onion until softened, about 2-3 minutes. Stir in reserved seasoned flour and cook, stirring, until the flour is completely incorporated, about 1 minute. Add broth and 2 tbsp lemon juice and thyme. Bring mixture to a boil, stirring constantly.
Return chicken to skillet and reduce heat to medium-low and cover the skillet. Cook until the chicken is tender, about 5 minutes.
Divide chicken among 4 plates. Stir in remaining 1 tbsp lemon juice to the sauce in the skillet and pour over the chicken. Serve over the chicken and garnish. Serves 4
