CHAMPIONSHIP MEMPHIS FINISHING SAUCE AND RUB for Ribs

Dry rub
10 tbsp pepper and paprika
1 tbsp dry mustard, chili powder, red pepper and garlic powder
3 tbsp celery salt

Finishing sauce
1 (32 oz) bottle ketchup
1 (8 oz) bottle soy sauce and apple cider vinegar
4 oz Worcestershire sauce and apple juice
1 tbsp garlic powder and white pepper

Mix rub ingredients together. Rub into pork ribs and place into the refrigerator 4-10 hours before cooking. Bring sauce ingredients to a boil then add in 1 finely grated yellow onion and yellow delicious apple and 1/4 small red bell pepper. Cook until desired thickness.

Cook prepared ribs for about 5 1/2 - 7 hours over charcoal and keep at 180 to 200 degrees. Baste occasionally with apple juice.

Use soaked apple wood chips in the fire to cream a sweet flavor. About 30 minutes before serving, brush ribs with finish sauce. Right before serving, sprinkle on dry rub.

Serve sauce on the side.
