6 potatoes
1 lb ground beef
1/2 cup onion, chopped
1 tsp salt and pepper
1 1/4 pkg taco seasoning
1/2 cup chopped red bell pepper
2 (12 oz) pkg shredded cheddar cheese
1 (12 oz) pkg shredded mozzarella cheese, divided
Garnish: Chives, bacon bits and sour cream

Bake potatoes at 450 for 1 hour or until potatoes are tender. Cut in half lengthwise and scoop out center of each potato, leaving 1/4 inch around edges. Save centers of potatoes for another recipe.

In a skillet, brown ground beef with onion, salt and pepper; drain. Add taco seasoning and simmer. Place potato halves in a greased baking sheet. Sprinkle with half of cheddar cheese and 2 tbsp ground beef, chopped pepper, then top with mozzarella and remaining cheddar cheese. Broil 3-4 inch from heat source until cheese is bubbly. Sprinkle on chives, bacon bits and sour cream. Makes 12 potato skins.
