2 tbsp olive oil, divided
1 tsp coarsely chopped garlic, divided
8 diagonal slices (1/4 inch thick) sourdough bread, divided
1/2 cup grated asiago cheese, divided
2 tbsp prepared pesto
1/4 tsp pepper
4 boneless, skinless chicken breasts
12 slices mozzarella cheese
2 tomatoes, each cut into 4 slices

In a skillet, heat 1 tbsp oil and 1/2 tsp garlic. Add 4 slices bread. Cook over medium-high heat, turning once, 5-7 minutes or until toasted. Remove pan. Add remaining oil and garlic; repeat with remaining slices of bread. Sprinkle 1/4 cup cheese on bread.

In same skillet, combine pesto and pepper. Add chicken, coating with pesto. Cook over medium heat, turning once, 8-10 minutes or until chicken is brown and no longer pink in centers. Place 3 slices mozzarella cheese on each bread slice the with tomato slice. Slice chicken pieces in half horizontally. Place on tomato; sprinkle with remaining asiago cheese. Makes 4 sandwiches
