CINNAMON MOCHA CREAM WITH TORTILLA CHIPS

2 tsp sugar
1/2 tsp cinnamon
2 (8 inch) flour tortillas
Melted butter or butter flavored cooking spray
3/4 cup Mexican chocolate sauce (recipe follows)
1 pint Coffee Fudge Ice Cream
2 tbsp chopped pecans, toasted

Preheat oven to 375. In a small bowl, combine sugar and cinnamon. Coat each tortilla with either the melted butter or butter flavored cooking spray.

Sprinkle each tortilla with about 1 tsp sugar cinnamon mixture. Cut each tortilla into 6 wedges. Place on an ungreased cookie sheet.

Bake at 375 for 7-10 minutes or until crisp and edges are lightly golden brown. Cool.

To serve, spoon about 3 tbsp sauce onto each of 4 individual dessert plates or shallow bowls. Place scoop of ice cream on each plate. Garnish with chips, nuts and zest. Serves 4

Mexican Chocolate Sauce
1/4 cup unsweetened cocoa
1/2 tsp cornstarch
1/4 tsp cinnamon
1/2 cup orange juice
1 tsp grated orange peel
1 cup chocolate syrup

In a saucepan, combine first 3 ingredients. Stir in orange juice and peel. Stirring constantly, cook over medium heat for 4-6 minutes or until bubbly and thickened. Stir in chocolate syrup. Mix well and cool.
