Chow sauce
1 tbsp Worcestershire sauce and dry sherry
2 tbsp ketchup
1/4 cup water
2 tbsp sugar
1/2 tsp salt
1 1/2 tsp cornstarch
Shrimp
1 tsp salt
1 large shrimp, shelled and deveined
2 1/2 tbsp vegetable oil
4 large cloves garlic, minced
1 tsp minced fresh ginger
1/2 tsp crushed red pepper
5-6 green onions, green parts and all, thinly sliced
Mix the ingredients for the chow sauce in a small bowl; set aside.
Rub the salt into the shrimp. Let it stand for about 15 minutes, then rinse well and dry with paper towels. Heat 1 1/2 tbsp oil in a pan. Add the shrimp and stir-fry until they turn pink. Remove the shrimp and set aside.
Heat the rest of the oil and stir-fry the garlic, ginger and red pepper for just a few seconds. Return the shrimp to the pan along with the green onions. Stir in the chow sauce, and keep stirring until the sauce becomes thick. Serves 4
